Here at Lord Chambray, we're thrilled to introduce you to our collection of Winter Warmers – a selection of beers that not only take the edge off the cold but elevate your winter experience to a whole new level. So, grab your favorite blanket, find a cozy spot, and let's delve into the rich and robust flavors of our winter brews.


 



1. 67 IPA: A Bold Symphony of Flavors


Our 67 IPA is a local favorite for a reason – it's bold, it's attention-grabbing, and it demands to be savored. Imagine old-school piney and resiny aromas blending seamlessly with aromatic citrus and a sweet caramel backdrop. Clean and light-bodied yet crisp, hoppy, and aggressively bitter – this IPA is a winter powerhouse.


Food Pairings: Dive into the boldness with Thai and Indian cuisines, complement it with pork schnitzels, or let it dance alongside a piece of mature cheddar.




2. Revival Rye IPA: A Symphony of Hops and Spice 


For those seeking the perfect backbone of spice, our Revival Rye IPA is a masterpiece. A blend of pale ale, red-x, and wheat malt sets the stage for five hop varieties – Amarillo, Simcoe, Mosaic, Cascade, and Citra. The result? Enter the realm of the beastly with No Limit, our classic barley wine-style beer. Rich in bittersweet malt with a medium amount of hops, this brew is solid, robust, and refined in its intensity – akin to a fine wine. Enjoy it fresh or let it age gracefully for tantalizing new flavors.

4. Off-Road Coconut Stout: A Tropical Escape in Every Sip

5. Fungus Rock: A Nimble Hoppy Stout


Dive into the unexpected with Fungus Rock, a hoppy stout with a distinctive blend of dark malts. Green coffee beans, fresh walnuts, roasted barley, and subtle chocolate notes create an aroma that belies its surprisingly nimble palate.

Fungus Rock Cake Recipe: A Taste of Winter Bliss


And because winter is also the season for sweet indulgences, we bring you a delectable Fungus Rock Cake recipe. This dessert, inspired by our hoppy stout, is a delightful treat to complement your winter beer adventures.

 

 Cake Ingredients:

225g flour
100g cocoa powder
16g baking powder
4 eggs
350g brown sugar
1 bottle of Fungus Rock

Topping Ingredients:

300g cream cheese
150g icing sugar
2 tsp corn flour
125ml double cream


Methods:
 

Sift and mix flour, cocoa, and baking powder.


Whisk eggs and brown sugar, then stir in the flour and cocoa mix slowly until creamy.


Slowly add and mix the Fungus Rock into the mixture.


Pour the mixture into a pan and bake at 180 degrees Celsius for 45 to 60 minutes.


Lightly whip the cream cheese until smooth, stir in icing sugar and corn flour, and then beat to combine.


Ice the top of the cake.
